Every Puesto taco starts with our signature blue corn tortillas — organic, non-GMO, and hand-pressed in-house daily. Blue corn cultivation traces back to the Pueblo tribes of the American Southwest as early as the 1200s, making it one of the oldest ingredients in Mexican and Southwestern cooking. At Puesto, that tradition shows up in every taco on the menu, from our tortillas to fillings like Filet Mignon, Chicken Al Pastor, and Lobster.
